No shoyu. No milk. No bread. No rice. Sue Kiyabu did the unthinkable. She went a week without these staples of the average Islander’s diet. The reason: Kiyabu had decided to try her hand–and her mouth and her stomach–at a diet ,which is more sustainability friendly than any other. For one week, not only did Kiyabu’s diet consist solely of organic food but she only ate food that was grown, raised, picked and processed right here in Hawai’i. How did she do?
