Pacific Soul parks it
Pacific Soul / This Friday, Sean Priester’s popular Soul Patrol lunchwagon and roving farmers’ market booth will be joined by a stationary HQ in the food hive at the bottom of St. Louis Heights Drive. Taking over the space that was La Habana for a blink of an eye, Priester will be making all your Pacific Soul favorites such as vegetarian black-eyed-pea chili, collard greens and his award-winning fried chicken.
Priester has been making culinary waves since the 1990s, when he cooked at the late Sunset Grill, then his popular Wild Mushroom at the Richards Street YWCA, and most recently helming the Top of Waikiki kitchen.
Now that he has a new home, Priester says he has “a lot I want to do.” He’s thinking gluten-free cornbread for the wheat-intolerant, chorizo, and making things like pulled pork sliders and Little Smokie po’ boys for a fun late-night menu.
But he’s trying to take things at an easy pace, serving breakfast, lunch and dinner. “I just want to make sure everyone has a great experience,” he says. “Maybe I’ll never need a grand opening–maybe it’ll just be grand. I’ll go with my soul.”
